Homemade Vegan “Tuna” Salad

Many times Nathan and I find ourselves looking for easy options to make ahead of time to take to work for lunch.  Of course, we eat salads and other sandwiches made with Funa_1vegan meat substitutes.  Then one day Nathan came across this vegan “Tuna” salad recipe and edited it a little for our tastes and EUREKA!  We affectionately call this “Funa” which is short for Fake Tuna.  It is a simple recipe to make and frankly, it is delicious and tastes surprising similar to actual tuna salad.  If you will give this one a chance, I think you will be delighted.

Ingredients:

  • 1 cup raw sunflower seeds (roasted will work as well)
  • 2 Tbsp vegan mayonnaise
  • 1 Tbsp mustard of our choice
  • 2 tsp pickle relish (sweet or dill, your choice)
  • 2 tsp smoked paprika
  • Salt & Pepper to taste

Directions:

Soak sunflower seeds in water overnight.  Drain the sunflower seeds and then add all ingredients to a food processor.  Process on high until the mixture reaches the desired consistency.  We like our “Funa” salad more smooth so we process it longer.  However, you can blend or pulse it for shorter times and get a chunkier consistency.
