Homemade Soy Yogurt

Yogurt makes a delicious snack, breakfast, or even dessert.  This is our recipe for mixed homemade mixed berry soy yogurt.

Ingredients:

  • 2 quarts organic soy milk (sweetened or unsweetened, your choice)
  • 2 packets non-dairy yogurt starter (or 1/4 cup yogurt from your last batch)
  • 5 or 6 Tbsp organic berry or fruit preserves of your choice

Directions:

Use a double boiler to bring the two quarts of soy milk to 180°, stirring occasionally .  Remove the milk from the heat source and allow to cool to 108° – 112°, again stirring occasionally.  If you are using the yogurt starter, dissolve two packets of the yogurt starter in 1/2 cup of the cooled soy milk.  Add the mixture back to the soy milk and stir well.  Incubate the mixture at 112° for 12 – 14 hours (up to 24 hours for more tart yogurt).  We use a yogurt maker for the incubation, it keeps the yogurt mixture at the perfect temperature for a specific amount of time.

Once the yogurt has incubated for 12 – 14 hours, strain off the whey using a yogurt strainer or a cheese cloth.  We usually strain our yogurt in the refrigerator for 8 – 10 hours.  Empty the strained yogurt into a mixing bowl and add the berry or fruit preserves and mix well using a whisk.

This makes a delicious fruit or berry flavored yogurt sweetened with the preserves.

**Note:  You can keep the whey to use in other things like bread and protein shakes to add more protein to those recipes.
